Creamy Broccoli Alfredo Pasta

8 oz fettuccine pasta

2 cups fresh broccoli florets

4 tbsp unsalted butter

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and black pepper, to taste

1/4 tsp nutmeg (optional)

1/4 cup chopped fresh parsley, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Cook the Pasta and Broccoli:

    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the boiling pasta. Once done, reserve 1/2 cup of the pasta water and drain the pasta and broccoli.

      Prepare the Alfredo Sauce:

        In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

          Add Cream and Cheese:

            Lower the heat to medium-low and pour in the heavy cream. Stir continuously for about 2-3 minutes until the cream starts to thicken. Gradually whisk in the Parmesan cheese until fully melted and incorporated. Season with salt, black pepper, and nutmeg, if using.

              Combine Pasta and Sauce:

                Add the drained fettuccine and broccoli to the skillet with the Alfredo sauce. Toss gently to coat the pasta and broccoli evenly. If the sauce is too thick, add a splash of the reserved pasta water until you reach the desired consistency.

                  Serve:

                    Plate the creamy broccoli Alfredo pasta and garnish with chopped parsley. Sprinkle with additional Parmesan cheese, if desired. Serve hot and enjoy!
