Creamy Avocado and Bacon Penne

12 oz penne pasta

2 ripe avocados, peeled and pitted

4 slices of thick-cut bacon, chopped

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: crushed red pepper flakes for heat

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the penne and cook according to package instructions until al dente. Drain the pasta and reserve 1/2 cup of the pasta cooking water.

      Cook the Bacon:

        - In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the pan.

          Prepare the Sauce:

            - In the same skillet with the bacon grease, reduce the heat to low. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.

              - Add the heavy cream to the skillet, bringing it to a gentle simmer. Stir occasionally.

                Blend the Avocado:

                  - In a blender or food processor, combine the avocados, lemon juice, Parmesan cheese, salt, and pepper. Blend until smooth. If the mixture is too thick, you can add a bit of the reserved pasta cooking water to achieve a creamy consistency.

                    Combine Ingredients:

                      - Once the cream is simmering, add the avocado mixture to the skillet, stirring well to combine. Then add the cooked penne and crispy bacon, mixing everything together gently until well coated. If the sauce is too thick, add more reserved pasta water until desired consistency is reached.

                        Serve:

                          - Taste and adjust seasoning with more salt, pepper, or lemon juice if desired. Serve hot, garnished with fresh basil leaves and a sprinkle of crushed red pepper flakes if you like some heat.
