Creamy Alfredo Veggie Bake

8 ounces penne pasta

2 cups broccoli florets

1 cup sliced bell peppers (red, yellow, or green)

1 cup sliced zucchini

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper to taste

1 cup Alfredo sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the broccoli, bell peppers, and zucchini. Sauté for 5-7 minutes, until slightly tender. Add the cherry tomatoes and cook for an additional 2 minutes. Season with salt, pepper, garlic powder, and Italian seasoning.

        Combine Ingredients: In a large mixing bowl, combine the cooked penne pasta, sautéed vegetables, and Alfredo sauce. Mix until everything is well coated.

          Prepare the Baking Dish: Transfer the pasta and veggie mixture into a greased 9x13 inch baking dish.

            Add Cheese: Sprinkle the mozzarella and Parmesan cheese evenly over the top of the pasta and veggies.
