Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups vegetable broth

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

4 cups kale, chopped and stems removed

1 cup coconut milk (or heavy cream for a non-vegan version)

Salt and pepper, to taste

Juice of 1 lemon

Grated Parmesan cheese (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrots, and celery. Cook for another 5–7 minutes, until the vegetables start to soften.

      Add the dried thyme and oregano; stir to combine and cook for 1 more minute until fragrant.

        Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and add the white beans. Simmer for about 15 minutes, allowing the flavors to meld.

          Using an immersion blender, blend the soup until it reaches your desired creaminess. You can also transfer about half of the soup to a blender, blend until smooth, and return it to the pot.

            Stir in the chopped kale and allow it to wilt for about 5 minutes.

              Reduce the heat to low and stir in the coconut milk. Season with salt and pepper to taste.

                Finish with a squeeze of lemon juice for brightness; stir well.

                  Serve hot, garnished with grated Parmesan (if using) and fresh parsley.
