Cozy Chicken and Rice Casserole Delight

2 cups cooked white rice

1 pound boneless, skinless chicken breasts, diced

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese (plus more for topping)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, thyme, and paprika. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove from heat.

      Sauté the Vegetables: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, cream of chicken soup, chicken broth, cooked chicken, sautéed onions, garlic, mixed vegetables, and 1 cup of shredded cheddar cheese. Mix until well combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly.

            Top with Cheese: Sprinkle additional shredded cheddar cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley if desired. Serve hot and enjoy your cozy meal!
