2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound Italian sausage (mild or spicy, depending on preference)

4 cups butternut squash, peeled and cubed (about 1 small squash)

6 cups chicken broth (or vegetable broth for a vegetarian option)

1 teaspoon dried thyme

1 teaspoon dried sage

2 cups fresh spinach, roughly chopped

1 package (9 ounces) cheese tortellini

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Cook Sausage: Crumble the Italian sausage into the pot. Cook, stirring frequently, until browned and cooked through, approximately 5-7 minutes. If there's excess fat, drain it, leaving about 1 tablespoon in the pot.

      Add Butternut Squash: Stir in the cubed butternut squash and cook for another 3-4 minutes until the squash begins to soften.

        Pour in Broth & Spices: Add the chicken broth, thyme, and sage to the pot. Bring to a gentle boil, then reduce heat to a simmer. Cover and let cook for about 15-20 minutes until the squash is tender.

          Blend Soup (Optional): If you prefer a creamier texture, use an immersion blender to puree the soup slightly, leaving some chunks of squash for texture. Alternatively, transfer half of the soup to a regular blender, blend until smooth, and return it to the pot.

            Add Tortellini & Spinach: Stir in the tortellini and spinach, and cook according to the tortellini package instructions, about 3-5 minutes until the tortellini is tender.

              Season: Taste and season with salt and pepper as needed.

                Serve: Ladle the soup into bowls, garnish with fresh parsley and a sprinkle of Parmesan cheese if desired. Enjoy your cozy meal!
