12 oz penne or rigatoni pasta

1 lb ground beef or ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with green chilies if desired)

1 cup corn (fresh, frozen, or canned)

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne or rigatoni according to package instructions until al dente. Drain and set aside.

    Prepare the Meat: In a large skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until the onion is translucent (about 3-4 minutes).

      Brown the Meat: Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

        Add Aromatics: Stir in the minced garlic, cooking for an additional minute until fragrant.

          Combine Ingredients: To the skillet, add black beans, diced tomatoes (with their juices), corn, chili powder, cumin, smoked paprika, and salt and pepper. Mix well and let simmer for about 5 minutes.

            Combine with Pasta: Add the cooked pasta to the skillet, stirring to combine all ingredients evenly. Cook for another 3-4 minutes until everything is heated through.

              Cheesy Finish: Sprinkle the shredded cheddar cheese on top, allowing it to melt for a couple of minutes.
