Ingredients

1 large rectangular tortilla (whole wheat or gluten-free)

8 oz cream cheese, softened

1/2 cup Greek yogurt

1 tsp garlic powder

1 tsp dried dill or 1 tbsp fresh dill, chopped

1/2 tsp onion powder

Salt and pepper, to taste

1 cup finely chopped bell peppers (red, green, or yellow)

1 cup shredded carrots

1/2 cup chopped cucumbers

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Prepare the Cream Cheese Mixture: In a medium bowl, combine the softened cream cheese and Greek yogurt. Mix until smooth and creamy. Add in the garlic powder, dill, onion powder, salt, and pepper. Stir well until everything is evenly blended.

Assemble the Pizza Base: Place the large tortilla on a clean, flat surface or a cutting board. Use a spatula to spread the cream cheese mixture evenly over the tortilla, ensuring it covers all edges.

Layer the Veggies: First, sprinkle the chopped bell peppers evenly over the cream cheese layer. Follow with shredded carrots, then add the chopped cucumbers. Scatter the halved cherry tomatoes and black olives on top.

Chill and Set: Carefully roll the tortilla from one long side to the other, making a tight log. Once rolled, wrap it tightly in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the log to firm up.

Slice and Serve: After chilling, unroll the tortilla from the plastic wrap and place it on a cutting board. Using a sharp knife, cut the rolled tortilla into squares, around 1-2 inches each. Arrange them on a platter and garnish with fresh parsley.

Enjoy: Serve your cold veggie pizza squares at gatherings, picnics, or as a refreshing appetizer. Enjoy the crunchy veggies combined with the creamy base on a delightful tortilla crust!
