Cold Pesto Pasta with Cherry Tomatoes

12 oz spaghetti or your pasta of choice

1 cup fresh basil leaves

1/2 cup pine nuts (toasted)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

2 cups cherry tomatoes, halved

1 cup baby spinach leaves

Zest and juice of 1 lemon

Optional: 1/4 tsp red pepper flakes for a kick

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.

    Prepare the Pesto: In a food processor, combine the basil, pine nuts, Parmesan cheese, and minced garlic. Pulse until the ingredients are finely chopped.

      Emulsify the Sauce: With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste. If you like a bit of heat, add the red pepper flakes.

        Combine Pasta and Pesto: In a large mixing bowl, combine the cooled pasta with the basil pesto. Toss well to ensure every strand is coated in the green goodness.
