4 medium zucchinis (spiralized into noodles)

1 cup red bell pepper (thinly sliced)

1 cup carrots (julienned)

½ cup edamame (shelled, cooked, and cooled)

¼ cup green onions (chopped)

¼ cup fresh cilantro (chopped)

1 tablespoon sesame seeds (toasted)

For the Peanut Sesame Sauce:

¼ cup natural peanut butter

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon sriracha (optional, for heat)

1-2 tablespoons water (to thin the sauce)

Make the Peanut Sesame Sauce: In a medium bowl, combine peanut butter, soy sauce, rice vinegar, sesame oil, honey or maple syrup, and sriracha. Whisk until smooth. If the sauce is too thick, gradually add water until you reach your desired consistency. Taste and adjust seasoning as needed.
