Cold Italian Pasta Skewers

8 oz. of fusilli or rotini pasta

1 cup cherry tomatoes, halved

1 cup mozzarella balls (bocconcini), drained

1 cup roasted red bell peppers, cut into bite-sized strips

1/2 cup pitted black olives, halved

1/4 cup fresh basil leaves

1/4 cup balsamic glaze

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Wooden or metal skewers

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli or rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool the pasta completely. Set aside.

    Prep the Ingredients: While the pasta is cooking, prepare the other ingredients. Halve the cherry tomatoes, slice the roasted red bell peppers, and halve the olives. In a bowl, combine the mozzarella balls and the basil leaves.

      Assemble the Skewers: Take a skewer and start layering the ingredients in the following order: a basil leaf, followed by a mozzarella ball, a cherry tomato half, a piece of roasted bell pepper, a pasta twist, and an olive half. Repeat this process until the skewer is filled, leaving a little space at the ends for handling. Aim for 4-5 repetitions on each skewer.

        Drizzle and Season: Once all the skewers are assembled, drizzle with extra virgin olive oil and balsamic glaze. Sprinkle with salt and pepper to taste, giving them a final toss if necessary to ensure even coating.

          Chill and Serve: Place the completed skewers in the refrigerator for at least 30 minutes to allow the flavors to meld and to serve cold. Arrange on a platter and enjoy as a refreshing appetizer or party snack!
