Cold Italian Pasta Salad

12 ounces rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup bell peppers (red and yellow), diced

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop cooking. Set aside to cool completely.

    Prepare the Vegetables: While the pasta cools, wash and chop the cherry tomatoes, cucumbers, bell peppers, red onion, and basil. Add all the chopped vegetables to a large mixing bowl.

      Mix the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Combine Ingredients: Once the pasta is cool, add it to the bowl with the vegetables. Pour the dressing over the pasta and vegetables, then gently toss to combine everything evenly.

          Add Cheese and Olives: Fold in the crumbled feta cheese and sliced black olives, being careful not to break up the feta too much.

            Chill and Serve: Cover the salad with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to let the flavors meld. Before serving, give the salad a good toss and adjust seasoning if necessary.
