1 cup couscous

1 ½ cups vegetable broth (or water)

1 can (15 oz) chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 red bell pepper, diced

½ red onion, finely chopped

1 avocado, diced

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

Juice of 1 lemon

3 tablespoons olive oil

Salt and pepper to taste

Feta cheese (optional, for topping)

Cook Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the couscous, stir briefly, and remove from heat. Cover and let it sit for about 5 minutes until the liquid is absorbed. Fluff with a fork and allow it to cool to room temperature.

    Prepare Veggies: While the couscous is cooling, chop the cherry tomatoes, cucumber, red bell pepper, red onion, and avocado into bite-sized pieces. Place them in a large mixing bowl.
