8 oz (225g) penne pasta

2 cups cooked chicken, shredded or diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped

For the Lemon Vinaigrette:

Juice of 2 large lemons

1/3 cup extra virgin olive oil

1 teaspoon Dijon mustard

1 teaspoon honey (or maple syrup for a vegan version)

Salt and pepper to taste

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain the pasta, rinse it under cold water to stop the cooking process and cool it down.
