Ingredients

2 ½ cups sweetened shredded coconut

½ cup sweetened condensed milk

1 teaspoon vanilla extract

¼ teaspoon almond extract

2 large egg whites

¼ teaspoon salt

½ cup semi-sweet chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

Mix Coconut and Condensed Milk: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond extract. Stir until well combined.

Whip Egg Whites: In a separate bowl, use an electric mixer to beat the egg whites and salt on medium speed until they form stiff peaks (about 3-4 minutes). This is crucial for the macaroon's light and airy texture.

Fold Mixtures Together: Gently fold the egg whites into the coconut mixture using a spatula. Be careful not to deflate the egg whites; you want to keep the mixture light and fluffy.

Scoop the Mixture: Using a small cookie scoop or tablespoon, portion out the mixture onto the prepared baking sheet, leaving about an inch of space between each mound.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown. Keep an eye on them to prevent burning.

Cool and Decorate: Remove the macaroon from the oven and allow them to cool on the baking sheet for about 10 minutes before transferring them to a wire rack. If desired, melt the chocolate chips in the microwave or using a double boiler. Drizzle or dip the cooled macaroon tops in the chocolate for an extra treat.

Serve: Enjoy the macaroons on their own or as a delightful addition to your dessert table!
