Classic Spaghetti Bolognese Sauce

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium carrot, finely diced

1 celery stalk, finely diced

500g ground beef (or a mix of beef and pork)

1 can (400g) crushed tomatoes

2 tablespoons tomato paste

150ml red wine (optional)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper, to taste

150ml whole milk

300g spaghetti

Fresh basil or parsley, for garnish

Grated Parmesan cheese, for serving

Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are softened and fragrant.

    Brown the Meat: Increase the heat to medium-high and add the ground beef (or meat mix). Cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 8-10 minutes.

      Build the Sauce: Stir in the crushed tomatoes, tomato paste, and red wine (if using). Add the dried oregano, dried basil, salt, and black pepper. Reduce the heat to low and let it simmer uncovered for about 30 minutes, stirring occasionally. This helps the flavors meld beautifully.

        Add Creaminess: Pour in the whole milk and stir well. This will give the sauce a nice creamy texture and balance the acidity from the tomatoes. Continue to simmer for another 10-15 minutes.

          Cook the Pasta: Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the spaghetti.

            Combine: Toss the drained spaghetti with the Bolognese sauce, adding a splash of reserved pasta water if needed to loosen the sauce. Mix well to ensure the spaghetti is coated.
