8 ounces of rotini pasta

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 ripe avocado, diced

4 hard-boiled eggs, peeled and chopped

6 slices of crispy bacon, crumbled

1 cup blue cheese, crumbled

3 green onions, sliced

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

For the Dressing:

1/3 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, onion powder, salt, and pepper until well combined. Adjust seasoning to taste.
