4 boneless, skinless chicken breasts

4 slices of Swiss cheese

4 slices of ham (preferably black forest or honey ham)

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Cooking spray or melted butter for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.

    Prepare the Chicken: Place each chicken breast between two pieces of plastic wrap. Gently pound with a meat mallet until they are about 1/2 inch thick. Season both sides with salt and pepper.

      Stuff the Chicken: Lay a slice of ham and a slice of Swiss cheese on top of each chicken breast. Roll the chicken tightly, starting from the smaller end, and secure with toothpicks if necessary.

        Set up the Breading Station:

          - In a shallow bowl, mix the flour with garlic powder, thyme, salt, and pepper.

            - In another bowl, whisk together the eggs and Dijon mustard until well combined.

              - In a third bowl, place the breadcrumbs.

                Coat the Chicken: Dredge each chicken roll in the flour mixture, shaking off the excess. Then dip it into the egg mixture, allowing any excess to drip off. Finally, coat it in breadcrumbs, pressing gently to ensure they adhere well.

                  Arrange for Baking: Place the breaded chicken rolls seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with melted butter to help achieve a golden brown color.

                    Bake the Chicken: Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the breading is golden and crispy.

                      Serve: Let the chicken rest for 5 minutes before removing the toothpicks. Slice each roll into medallions and serve with a side of your favorite vegetables or a light salad.
