Cinnamon Sugar Zucchini Donuts

1 cup grated zucchini (with excess liquid squeezed out)

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1/3 cup vegetable oil

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup powdered sugar (for glaze)

2 tbsp milk (for glaze)

2 tbsp granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a donut pan with cooking spray or brush with melted butter.

    Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess liquid. You should have about 1 cup of dry zucchini.

      Mix the Wet Ingredients: In a large mixing bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing. Gently fold in the grated zucchini until evenly distributed in the batter.

            Fill the Donut Pan: Spoon the batter into the prepared donut pan, filling each mold about 2/3 full to allow room for rising. Use a piping bag or a zip-lock bag with the corner snipped off for easier pouring.
