Ingredients

For the Chocolate Cupcakes:

1 ¾ cups all-purpose flour

1 ¾ cups sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking soda

1 teaspoon baking powder

½ teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Caramel Frosting:

½ cup unsalted butter, softened

1 cup brown sugar, packed

⅓ cup heavy cream

1 teaspoon vanilla extract

2 cups powdered sugar

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C) and line a standard cupcake pan with cupcake liners.

Step 2: Prepare the Cupcake Batter

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix well to combine.

          Step 3: Combine Wet Ingredients

In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.

Step 4: Mix Dry and Wet Ingredients

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Then carefully stir in the boiling water until the batter is smooth (it will be thin).

                  Step 5: Bake the Cupcakes

Pour the batter into the prepared cupcake liners, filling each about ⅔ full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 6: Prepare the Caramel Frosting

In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar and cook for about 2 minutes, stirring continuously. Add the heavy cream and bring to a boil, stirring constantly. Let it bubble for about 1 minute, then remove from heat and stir in the vanilla extract.

Step 7: Cool the Caramel Mixture

Allow the caramel mixture to cool for about 10-15 minutes. Once cooled, gradually whisk in the powdered sugar until the frosting is smooth and spreadable. If the frosting is too thick, add a splash more cream until desired consistency is achieved.

                              Step 8: Frost the Cupcakes

Once the cupcakes are completely cooled, generously frost each cupcake with the caramel frosting. Drizzle extra caramel sauce on top if desired for an added touch!

                                  Step 9: Serve and Enjoy

Serve the cupcakes at room temperature, and watch them disappear as your guests indulge in this chocolatey treat topped with sweet caramel goodness!
