1 cup pitted Medjool dates

1 cup unsweetened shredded coconut (plus extra for rolling)

1/2 cup almond flour

1/4 cup cocoa powder

1/4 cup almond or peanut butter

1 tsp vanilla extract

1/4 tsp sea salt

2-3 tbsp maple syrup (optional, for additional sweetness)

1/4 cup dark chocolate chips (dairy-free if preferred)

Instructions
 

Prepare the Dates: If your Medjool dates are firm, soak them in warm water for 10 minutes to soften. Drain and pat dry.

    Blend Ingredients: In a food processor, combine the soaked dates, shredded coconut, almond flour, cocoa powder, nut butter, vanilla extract, and sea salt. Blend until the mixture is well combined and starts to clump together. You might need to scrape down the sides a few times.

      Adjust Sweetness: Taste the mixture and if you prefer it sweeter, add maple syrup a tablespoon at a time until desired sweetness is achieved. Pulse to incorporate.
