2 cups fresh corn kernels (about 4 ears of corn, or 2 cups frozen corn, thawed)

1 medium red onion, finely diced

2 medium tomatoes, diced (or 1 cup cherry tomatoes, halved)

1-2 chipotle peppers in adobo sauce, finely chopped (adjust based on desired spiciness)

2 tablespoons of adobo sauce (from the chipotle can)

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon cumin

Salt and pepper, to taste

Optional: 1 avocado, diced (for a creamy twist)

Prepare the Corn: If using fresh corn, shuck the ears and remove the kernels using a sharp knife. Blanch in boiling water for 2-3 minutes to enhance sweetness and color, then drain and cool. If using frozen corn, thaw and drain any excess water.

    Combine Ingredients: In a large mixing bowl, combine the corn kernels, diced red onion, diced tomatoes, and chopped cilantro.
