1 cup orzo pasta

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 bell pepper (any color), diced

1/3 cup Kalamata olives, pitted and sliced

1/3 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Orzo: In a medium saucepan, bring the vegetable broth or water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
