Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 small red onion, finely chopped

1 bell pepper (any color), diced

1 avocado, diced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Prepare the Base: In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, diced cucumber, red onion, and bell pepper. Gently toss to mix all the ingredients evenly.

Make the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic powder, smoked paprika, salt, and pepper until well combined.

Combine and Chill: Pour the dressing over the chickpea and vegetable mixture. Toss gently again to ensure everything is coated with the dressing.

Avocado Addition: Carefully fold in the diced avocado and chopped parsley to the salad.

Marinate: Cover the bowl with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Serve & Enjoy: Before serving, give the salad a gentle toss and sprinkle with crumbled feta cheese if using. Serve chilled as a refreshing side dish or enjoy it as a light meal!
