Chili Lime Tofu Rice Paper Rolls

Ingredients
  

200g firm tofu, pressed and sliced into strips

2 tablespoons soy sauce

1 tablespoon chili garlic sauce (adjust to taste)

1 tablespoon lime juice

1 teaspoon agave syrup or honey

1 teaspoon sesame oil

8 rice paper sheets

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 medium cucumber, julienned

1 medium carrot, julienned

1 avocado, thinly sliced

Optional dipping sauce: sweet chili sauce or peanut sauce

Instructions
 

Prepare the Tofu Marinade: In a bowl, mix soy sauce, chili garlic sauce, lime juice, agave syrup (or honey), and sesame oil. Marinate the sliced tofu for at least 15 minutes, allowing the flavors to penetrate.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat and add a drizzle of oil. Once hot, add the marinated tofu strips and cook until golden and slightly crispy on both sides, approximately 3-4 minutes per side. Remove from the skillet and let them cool slightly.

      Set Up Your Workspace: Gather all your ingredients including the fresh herbs, cucumber, carrot, and avocado. Prepare a shallow dish with warm water for softening the rice paper.

        Soften Rice Paper: Take one rice paper sheet and immerse it in warm water for about 10-15 seconds or until it becomes pliable. Carefully remove it from the water and lay it flat on a clean surface.

          Assemble the Rolls: Begin layering the ingredients on the lower third of the softened rice paper: add a few mint and cilantro leaves, some julienned cucumber, carrot, a slice of avocado, and 2-3 tofu strips. Leave a small border on the sides for easy rolling.

            Roll Up the Rice Paper: Fold the sides of the rice paper over the filling, then tightly roll from the bottom up, ensuring the filling remains secured. Repeat the process with the remaining rice paper sheets and fillings.

              Serve: Arrange the finished rolls on a serving platter. If desired, serve with a side of sweet chili sauce or peanut sauce for dipping.
