1 pound fresh snap peas, ends trimmed

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Zest of 1 lime

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro, for garnish

Optional: 1/2 cup crumbled feta cheese or queso fresco

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Snap Peas: In a large bowl, combine the snap peas with olive oil, chili powder, garlic powder, smoked paprika, lime zest, lime juice, salt, and pepper. Toss until the snap peas are well-coated with the seasoning mix.

      Arrange on Baking Sheet: Spread the seasoned snap peas in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for even roasting.

        Roast the Peas: Place the baking sheet in the preheated oven and roast for 10-12 minutes, or until the snap peas are tender-crisp and starting to brown slightly.

          Add Cheese (Optional): If you’re using feta or queso fresco, remove the snap peas from the oven and sprinkle the cheese on top. Return to the oven for an additional 2-3 minutes until the cheese is slightly melted.
