Ingredients

1 block (14 oz) firm tofu, pressed and drained

3 tablespoons soy sauce

2 tablespoons sesame oil

2 tablespoons chili garlic sauce (adjust to taste)

1 tablespoon maple syrup

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, cut into chunks (any color)

1 red onion, cut into wedges

1 zucchini, sliced into rounds

Skewers (metal or soaked wooden skewers)

Fresh cilantro or green onions for garnish (optional)

Instructions

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes and set aside.

Make the Marinade: In a medium bowl, whisk together soy sauce, sesame oil, chili garlic sauce, maple syrup, minced garlic, and grated ginger until well combined.

Marinate the Tofu: Add the tofu cubes to the bowl and gently toss to coat them in the marinade. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

Prepare the Vegetables: While the tofu is marinating, chop the bell pepper, red onion, and zucchini into skewering-friendly pieces.

Assemble the Skewers: Thread the marinated tofu and vegetable pieces onto the skewers, alternating between tofu and vegetables for a colorful presentation.

Preheat the Grill: Preheat your grill to medium-high heat or preheat your oven to broil if you’re using an indoor method.

Grill the Skewers: Place the skewers on the grill or broiler rack and cook for about 10-12 minutes, turning occasionally until the tofu is golden brown and slightly charred, and vegetables are tender.

Serve: Carefully remove the skewers from the grill. Garnish with fresh cilantro or sliced green onions if desired. Serve hot with steamed rice or in a salad.
