Ingredients

4 large russet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup vegetarian chili (store-bought or homemade)

1/2 cup sour cream (for garnish)

1/4 cup chopped green onions (for garnish)

Fresh cilantro (optional, for garnish)

Jalapeño slices (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Potatoes: Wash and peel the russet potatoes. Cut them into wedges or strips, depending on your preference.

Season the Fries: In a large mixing bowl, toss the potato wedges with olive oil, paprika, garlic powder, onion powder, salt, and pepper until they are evenly coated.

Bake the Fries: Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Add the Chili and Cheese: Once the fries are crispy, remove them from the oven. Spoon the vegetarian chili over the fries evenly and then sprinkle the shredded cheddar cheese on top.

Melt the Cheese: Return the loaded fries to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and let cool for a minute. Drizzle sour cream over the top, and garnish with green onions, fresh cilantro, and jalapeño slices if desired.
