For the Chicken:

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil, for frying

For the Marinara Sauce:

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper, to taste

For Assembly:

2 cups shredded mozzarella cheese

Fresh basil leaves, for garnishing

Instructions
 

Prepare the Marinara Sauce:

    - In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).

      - Add the minced garlic and cook for another 1-2 minutes until fragrant, but not browned.

        - Stir in the crushed tomatoes, dried basil, sugar (if using), salt, and pepper. Bring to a simmer, reduce heat, and let it cook gently for about 15-20 minutes, stirring occasionally. Adjust seasoning as needed.

          Prepare the Chicken:

            - Preheat your oven to 375°F (190°C).

              - Set up a breading station: one bowl for flour seasoned with salt and pepper, one for lightly beaten eggs, and one for a mixture of breadcrumbs, Parmesan cheese, garlic powder, dried oregano, salt, and pepper.
