2 cups elbow macaroni

2 cups cooked chicken, shredded (rotisserie chicken works great!)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/4 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 1-2 minutes to create a roux.

      Add Milk: Gradually pour in the milk, whisking continuously to avoid lumps. Continue cooking until the mixture thickens and bubbles, about 5-7 minutes.

        Incorporate Cheese: Reduce heat to low. Stir in the sharp cheddar and mozzarella cheese until melted and smooth. Add garlic powder, onion powder, paprika, salt, and pepper. Mix well and remove from heat.

          Combine Pasta and Chicken: Add the drained macaroni and shredded chicken to the cheese sauce. Mix until everything is well coated.

            Bake (Optional): If you’re in the mood for a baked version, preheat your oven to 350°F (175°C). Transfer the chicken mac and cheese to a greased baking dish. Top with breadcrumbs for a nice crunch, if desired.

              Bake: Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
