Chicken Cheesesteak Skillet

Ingredients
  

1 lb boneless, skinless chicken breasts, sliced thinly

2 tablespoons olive oil

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 medium red bell pepper, thinly sliced

4 ounces mushrooms, sliced (optional)

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

4 slices provolone cheese (or your cheese of choice)

4 large hoagie rolls or sub rolls

Optional toppings: mayonnaise, hot sauce, sautéed jalapeños

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat.

    Cook the Chicken: Add the chicken slices to the skillet. Season with smoked paprika, oregano, salt, and pepper. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the onions, green bell pepper, red bell pepper, and mushrooms (if using). Sauté for about 5-6 minutes until the vegetables are tender and slightly caramelized. Add the minced garlic and cook for an additional minute until fragrant.

        Combine and Melt: Return the cooked chicken to the skillet, mixing it with the sautéed vegetables. Lay the provolone cheese slices evenly over the top. Cover the skillet with a lid and reduce the heat to low. Let it sit for 2-3 minutes or until the cheese has melted.

          Assemble the Sandwiches: While the cheese is melting, split the hoagie rolls open without cutting all the way through. If desired, spread mayonnaise on the inside of the rolls. Spoon the cheesy chicken and vegetable mixture into each roll.
