Chicken Caprese Panini

Ingredients
  

2 boneless, skinless chicken breasts

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

4 slices of fresh mozzarella cheese

2 ripe tomatoes, sliced

Fresh basil leaves

4 ciabatta rolls (or your choice of bread)

Balsamic glaze (for drizzling)

Instructions
 

Prepare the Chicken:

    - Season the chicken breasts with Italian seasoning, salt, and pepper on both sides.

      Cook the Chicken:

        - In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature of 165°F). Remove from heat and let rest before slicing.

          Slice the Ingredients:

            - While the chicken rests, slice the tomatoes and fresh mozzarella cheese. Prepare the basil leaves for assembly.

              Assemble the Panini:

                - Slice the ciabatta rolls in half. On one half, layer sliced chicken, mozzarella, tomato slices, and fresh basil. Drizzle with balsamic glaze and top with the other half of the roll.

                  Grill the Panini:

                    - Preheat a panini press or a skillet over medium heat. If using a skillet, you may need to use a heavy pot or pan to press down on the sandwich.

                      - Lightly brush the outside of the rolls with olive oil or melted butter for a crispy crust. Place the sandwich in the press or skillet and grill for 3-5 minutes on each side, or until the bread is golden and the cheese has melted.

                        Serve:

                          - Remove the panini from the press or skillet, cut in half, and serve immediately, perhaps with a side salad or some chips.
