Chewy Chocolate Chip Cookie Bars

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

2 cups semi-sweet chocolate chips

1 cup chopped nuts (optional, walnuts or pecans work well)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

    Mix the Wet Ingredients: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together using an electric mixer on medium speed until creamy and smooth. This should take about 2-3 minutes.

      Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Then, incorporate the vanilla extract and mix until everything is well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt until evenly distributed.

          Combine Wet & Dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

            Fold in Chocolate Chips: Gently fold in the chocolate chips and, if using, the chopped nuts. Ensure they are evenly distributed throughout the dough.

              Spread & Bake: Spread the cookie dough evenly into the prepared baking pan. Use a spatula to smooth out the top. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

                Cool & Cut: Once done baking, remove the pan from the oven and let it cool in the pan for about 15-20 minutes. After cooling slightly, use a sharp knife to cut the bars into squares or rectangles, then transfer them to a wire rack to cool completely.
