Cheesy Zucchini Casserole

4 medium zucchinis, thinly sliced

1 cup of shredded mozzarella cheese

1 cup of shredded cheddar cheese

1/2 cup of grated Parmesan cheese

1 medium onion, diced

3 cloves of garlic, minced

1 cup of ricotta cheese

2 large eggs

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 cup of panko breadcrumbs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute. Then, add the sliced zucchinis and cook for about 5-7 minutes until they begin to soften. Season with salt, pepper, oregano, and basil. Remove from heat and set aside.

      Mix the Cheeses: In a large bowl, combine the ricotta, shredded mozzarella, cheddar, and grated Parmesan cheese. Stir in the eggs until well mixed.

        Combine Mixture: Add the sautéed zucchini and onion mixture to the cheese mixture, folding in gently until combined. Adjust seasoning with more salt and pepper, if needed.

          Prepare the Casserole Dish: Grease a 9x13 inch casserole dish with cooking spray or a little olive oil. Pour the zucchini and cheese mixture into the dish.

            Top with Breadcrumbs: Evenly spread the panko breadcrumbs over the top of the casserole for a nice crunchy texture.

              Bake: Place in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is set.

                Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with fresh chopped parsley before serving.
