Cheesy Turkey and Spinach Stuffed Shells

20 large pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (+ ½ cup for topping)

½ cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta Shells: In a large pot of boiling salted water, cook the pasta shells according to package directions until al dente. Drain and set aside to cool.

      Prepare Filling: In a large skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes. Break it apart with a spatula as you cook. Add minced garlic and chopped spinach, and sauté until the spinach wilts, about 2-3 minutes.

        Mix Ingredients: In a large bowl, combine the cooked turkey mixture with ricotta cheese, mozzarella cheese, Parmesan cheese, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined.

          Stuff the Shells: Using a teaspoon, carefully stuff each pasta shell with the turkey and spinach filling.

            Assemble Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer over the sauce. Pour the remaining marinara sauce over the shells and sprinkle the top with the remaining mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
