2 medium zucchini (zoodles, spiralized)

1 lb ground beef (or ground turkey)

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon taco seasoning (or to taste)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 can (14 oz) diced tomatoes (with juices)

2 cups shredded cheddar cheese (reserve ½ cup for topping)

1 cup salsa

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional: Avocado slices for serving

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 3-5 minutes. Add the ground beef (or turkey) and cook until browned, breaking it apart with a spoon. Drain any excess fat.

      Add Flavors: Stir in the taco seasoning, black beans, corn, diced tomatoes, and salsa. Season with salt and pepper to taste. Let this mixture simmer for about 5 minutes to meld the flavors.

        Prepare the Zoodles: In a large baking dish (9x13), spread the spiralized zucchini evenly across the bottom. It’s fine if the zoodles overlap slightly.

          Combine Ingredients: Pour the meat mixture over the zoodles, spreading it evenly. Top the casserole with 1.5 cups of the shredded cheddar cheese. Use the reserved ½ cup of cheese for the final topping.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and sprinkle the remaining cheese on top. Return to the oven and bake uncovered for another 10-15 minutes, or until the cheese is bubbly and golden.
