Cheesy Taco Casserole

1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1 cup salsa

Fresh cilantro, chopped (for garnish)

Optional: sliced jalapeños for added spice

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until it's browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Sauté Aromatics: Add the diced onion and garlic to the skillet. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

        Season the Beef: Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Mix well and let it simmer for about 5 minutes.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips at the bottom. Spoon half of the meat mixture over the chips. Sprinkle one cup of shredded cheese on top. Repeat the layers with the remaining tortilla chips, meat mixture, and end with the remaining cheese.

            Add Sour Cream and Salsa: In a small bowl, combine sour cream and salsa. Spread this mixture evenly over the top layer of cheese in the casserole.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

                Garnish and Serve: Let the casserole cool for a few minutes. Garnish with freshly chopped cilantro and, if desired, sliced jalapeños for an extra kick.
