12 jumbo pasta shells

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, finely chopped

5 ounces fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup grated Parmesan cheese

1 large egg

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: Bring a large pot of salted water to a boil and add the jumbo pasta shells. Cook for about 8-10 minutes or until al dente. Drain and set aside to cool.

      Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes until the onion is translucent. Add the chopped mushrooms and cook for an additional 5-7 minutes until the mushrooms are softened. Stir in the chopped spinach and cook until wilted. Season with salt and pepper. Remove from heat and let cool slightly.

        Prepare the filling: In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, the sautéed vegetable mixture, egg, Italian seasoning, and a pinch of salt and pepper. Mix until well blended.

          Stuff the shells: Take each cooked pasta shell and fill it with a generous spoonful of the cheese and vegetable mixture. Place the stuffed shells in a greased baking dish.

            Add marinara sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well covered.

              Top with cheese: Sprinkle additional mozzarella cheese on top of the marinara sauce for a cheesy finish.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until bubbly and golden brown on top.
