2 cups cooked chicken, shredded

1 cup salsa (choose your preferred heat level)

1 ½ cups shredded Mexican blend cheese (or cheese of your choice)

4 large flour tortillas

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (canned or frozen)

½ teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon chili powder (optional, for extra heat)

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Sour cream and avocado (for serving, optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Mix Filling: In a mixing bowl, combine the shredded chicken, salsa, black beans, corn, cumin, garlic powder, onion powder, and chili powder (if using). Stir until all ingredients are well combined and coated with salsa.

      Layer Tortillas: Grease a 9x13 inch baking dish with olive oil. Place one tortilla on the bottom. Spread one-third of the chicken mixture evenly over the tortilla, then sprinkle with a third of the cheese.

        Repeat Layers: Add another tortilla on top and repeat the layering process (chicken mixture and cheese) two more times. Top the final layer with a tortilla and finish with the remaining cheese to create a cheesy crust.

          Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbling and golden.

            Cool and Serve: Once baked, remove from the oven and let it cool for about 5 minutes. Cut into squares or wedges. Garnish with fresh cilantro and serve with sour cream and avocado on the side for added creaminess.
