2 lbs russet potatoes, peeled and cut into 1-inch cubes

1/2 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 cup green onions, finely chopped

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1 cup crushed cornflakes (for topping)

2 tbsp melted butter (for topping)

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 10-15 minutes. Drain and set aside.
