Cheesy Potato Bake

2 lbs (about 900g) Yukon gold potatoes, peeled and thinly sliced

1 cup (240ml) heavy cream

1 cup (240ml) milk

2 cups (200g) shredded sharp cheddar cheese

1 cup (100g) grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup (60g) unsalted butter, melted

1 cup (100g) breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potato Mixture: In a large mixing bowl, combine the heavy cream, milk, minced garlic, thyme, salt, black pepper, and smoked paprika. Whisk until well combined.

      Layer the Potatoes: In a lightly greased 9x13 inch (23x33 cm) baking dish, arrange half of the sliced potatoes in an even layer. Pour half of the cream mixture over the potatoes, then sprinkle half of the cheddar and Parmesan cheeses.

        Repeat Layers: Place the remaining potatoes on top, followed by the rest of the cream mixture. Finish by layering the remaining cheeses on top.

          Add Butter and Breadcrumbs: Drizzle the melted butter over the top. If using, sprinkle the breadcrumbs evenly over the cheese layer for a crispy topping.

            Bake Uncovered: Cover the baking dish loosely with aluminum foil and bake in the preheated oven for 40 minutes. Then, remove the foil and bake for an additional 20-25 minutes or until the top is golden brown and the potatoes are tender when pierced with a fork.

              Garnish and Serve: Once out of the oven, let the dish cool for about 10 minutes. Garnish with chopped fresh parsley before serving.
