2 cups mashed potatoes (prepared and cooled)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional for added flavor)

1 cup breadcrumbs (preferably panko for extra crunch)

Cooking spray or oil for greasing

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lightly greasing it with cooking spray or olive oil.

    Combine Ingredients: In a large mixing bowl, combine the cooled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, melted butter, egg, garlic powder, onion powder, black pepper, and paprika. Mix until all ingredients are well incorporated and the mixture is smooth and slightly sticky.

      Form the Puffs: Using your hands or a small scoop, take about 2 tablespoons of the potato mixture, roll it into a ball, and then form it into a small puff shape (similar to a small meatball). Repeat this process until all the mixture is used.

        Coat with Breadcrumbs: Place the breadcrumbs in a shallow dish. Roll each potato puff in the breadcrumbs until they are fully coated. This will give them a delightful crunch once baked.

          Arrange on Baking Sheet: Place the coated puffs on the prepared baking sheet, ensuring they are spaced apart for even cooking.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.

              Cool and Serve: Once baked, remove the puffs from the oven and let them cool for a few minutes. Serve warm with a dipping sauce of your choice, such as ranch dressing or a spicy aioli.
