2 cans (14.5 oz each) green beans, drained (or 4 cups fresh green beans, trimmed and blanched)

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese, divided

1 cup French fried onions, divided

Salt and pepper to taste

1 tablespoon olive oil

1 cup cherry tomatoes, halved (for a fresh twist)

1/4 cup grated Parmesan cheese (optional, for an extra cheesy crust)

Instructions
 

Preheat your oven to 350°F (175°C).

    Prepare the green beans: If using fresh green beans, blanch them in boiling water for about 3 minutes, then transfer to an ice bath. If using canned, simply drain and set aside.

      Mix the base: In a large mixing bowl, combine the cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth.

        Add in the green beans: Fold the drained green beans into the soup mixture until they're evenly coated.

          Incorporate the cheese: Add in 1 cup of shredded cheddar cheese and mix well. If you're using fresh cherry tomatoes, gently fold them in at this stage for added freshness.

            Transfer to a baking dish: Lightly grease a 9x13 inch baking dish with olive oil. Pour the green bean mixture into the dish, spreading it out evenly.

              Top it off: Sprinkle the remaining 1 cup of French fried onions evenly over the top. If desired, add an extra sprinkle of grated Parmesan cheese for a lovely golden crust.

                Bake: Place the casserole in the oven and bake for approximately 25-30 minutes, or until it's bubbly and the top is golden brown.
