Cheesy Cauliflower Broccoli Bake

1 medium head of cauliflower, cut into florets

1 medium head of broccoli, cut into florets

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 cup milk (whole or 2%)

1/2 cup heavy cream

3 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

1 tablespoon olive oil (optional for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Blanch the Vegetables: Bring a large pot of salted water to a boil. Add the cauliflower and broccoli florets, and blanch them for 3-4 minutes until slightly tender but still crisp. Drain and transfer to a bowl of ice water to stop the cooking process. After a few minutes, drain again and set aside.

      Make the Cheese Sauce: In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 30 seconds until fragrant. Sprinkle in the flour, stirring constantly for about 1 minute to create a roux.

        Add Milk and Cream: Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Continue to cook, whisking continuously, until the mixture thickens, about 5-6 minutes.

          Cheese It Up: Once the sauce is thickened, stir in the sharp cheddar cheese and half of the Parmesan cheese. Mix until fully melted and smooth. Season with onion powder, paprika, salt, and pepper to taste.

            Combine Vegetables and Sauce: In a large baking dish, combine the blanched cauliflower and broccoli with the cheese sauce. Stir well to coat the vegetables evenly.

              Prepare the Topping: If using breadcrumbs, mix them with a tablespoon of olive oil and the remaining Parmesan cheese in a small bowl. Sprinkle this over the cheesy vegetable mixture.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and Serve: Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley if desired before serving.
