2 cups cooked chicken, shredded or diced

2 cups broccoli florets (fresh or frozen)

1 cup uncooked white rice (or brown rice for a healthier option)

4 cups chicken broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of mushroom soup (or cream of chicken for a different flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

½ cup French fried onions (optional, for topping)

Fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Rice: In a large pot, combine the uncooked rice and 4 cups of chicken broth. Bring to a boil, then cover and reduce to a simmer. Cook for about 15-20 minutes, or until the rice is tender and has absorbed the broth. If using brown rice, follow package instructions for cooking time.

      Cook the Broccoli: While the rice is cooking, steam or boil the broccoli florets until bright green and just tender, about 3-5 minutes. Drain and set aside.

        Mix the Casserole: In a large mixing bowl, combine the cooked chicken, cooked rice, steamed broccoli, cream of mushroom soup, garlic powder, onion powder, paprika, salt, and black pepper. Stir until all ingredients are well mixed.

          Add the Cheese: Gently fold in half of the cheddar and mozzarella cheese into the mixture, reserving the other half for topping.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

              Add Cheese and Bake: Top the casserole with the remaining shredded cheddar and mozzarella cheese. If desired, sprinkle French fried onions on top for a crunchy finish.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove the casserole from the oven and let it cool slightly. Garnish with fresh parsley before serving.
