Cheesy Broccoli and Chicken Casserole

2 cups cooked chicken, shredded

3 cups fresh broccoli florets (or frozen)

1 cup cooked rice (white or brown)

2 cups shredded cheddar cheese

1 cup sour cream

1 cup chicken broth

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1/2 cup breadcrumbs (optional)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, bring a pot of boiling water to a boil and blanch the broccoli florets for 2-3 minutes until bright green. Drain and set aside. If using frozen, simply thaw and drain.

      Mix the Sauce: In a large mixing bowl, combine the sour cream, chicken broth, garlic powder, onion powder, black pepper, and salt. Mix well until smooth.

        Combine Ingredients: In the same bowl, add the shredded chicken, cooked rice, and blanched broccoli to the sauce mixture. Stir in 1 1/2 cups of cheddar cheese, reserving 1/2 cup for later. Mix until everything is well coated.

          Transfer to Baking Dish: Lightly grease a 9x13-inch baking dish with olive oil. Pour the chicken and broccoli mixture into the dish, spreading it evenly.

            Topping It Off: Sprinkle the reserved cheddar cheese evenly over the top. If desired, mix the breadcrumbs with a drizzle of olive oil and sprinkle over the cheese for an added crunchy texture.

              Bake the Casserole: Place the casserole in the preheated oven and bake for 25-30 minutes, until cheese is bubbly and slightly golden.

                Cool and Garnish: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
