1 can (15 oz) black beans, rinsed and drained

1 ripe avocado, diced

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup diced tomatoes (fresh or canned, drained)

½ cup diced red onion

1 small jalapeño, finely chopped (seeds removed for less heat)

2 cloves garlic, minced

½ cup cream cheese, softened

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Tortilla chips, for serving

Instructions
 

Prepare the Base: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced red onion and jalapeño, sautéing until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the Tomatoes and Black Beans: Next, add the diced tomatoes and rinsed black beans into the skillet. Stir to combine and cook for about 5 minutes, allowing the flavors to meld.
