Ingredients

1 lb ground beef

3 cups broccoli florets (fresh or frozen)

1 cup cheddar cheese, shredded (plus extra for topping)

1/2 cup cream cheese, softened

1/2 cup beef broth

1 cup cooked rice (white or brown)

2 cloves garlic, minced

1 small onion, diced

1 tsp soy sauce

1 tsp olive oil

Salt and pepper, to taste

1/4 tsp red pepper flakes (optional for spice)

Chopped green onions, for garnish

Instructions

Cook the Beef: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent. Add the ground beef, season with salt, pepper, and red pepper flakes (if using), and cook until browned (about 5-7 minutes). Drain any excess grease.

Add Broccoli: Stir in the broccoli florets and cook for an additional 3-4 minutes, allowing them to soften slightly. If using frozen broccoli, make sure to increase cooking time until heated through.

Incorporate Cheeses and Rice: Lower the heat, then add the cream cheese and cheddar cheese to the skillet. Pour in the beef broth and soy sauce, mixing until the cheeses have melted and formed a creamy sauce. Stir in the cooked rice until well combined.

Heat Through: Continue to cook on low for another 3-5 minutes, stirring occasionally, until everything is heated through and the broccoli is tender.

Serve: Remove from heat, sprinkle additional cheddar cheese on top, and cover the skillet for a minute to let the cheese melt slightly. Garnish with chopped green onions before serving.

Enjoy: Serve hot straight from the skillet for a hearty, one-pan meal that’s rich in flavor and cheesy goodness!
