Ingredients

For the Cheesecake Filling:

8 oz (225g) cream cheese, softened

1/4 cup (50g) granulated sugar

1/2 teaspoon vanilla extract

1 egg yolk

For the Chocolate Chip Cookies:

1 cup (2 sticks or 226g) unsalted butter, softened

3/4 cup (150g) brown sugar, packed

1/4 cup (50g) granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/4 cups (280g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (170g) semi-sweet chocolate chips

Instructions

Prepare the Cheesecake Filling:

    - In a mixing bowl, beat the softened cream cheese until smooth.

      - Add granulated sugar, vanilla extract, and egg yolk. Mix until well combined and creamy.

        - Refrigerate the filling for about 30 minutes while you prepare the cookie dough.

          Make the Chocolate Chip Cookies:

            - Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

              - In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

                - Beat in the egg and vanilla extract until fully incorporated.

                  - In a separate bowl, whisk together the flour, baking soda, and salt.

                    - Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

                      - Fold in the semi-sweet chocolate chips.

                        Assemble the Cookies:

                          - Use a cookie scoop to take a portion of cookie dough (about 1.5 tablespoons) and flatten it in the palm of your hand.

                            - Add a small spoonful of the chilled cheesecake filling in the center, then wrap the cookie dough around the filling to form a ball, ensuring the filling is completely enclosed.

                              - Place the stuffed cookie balls on the prepared baking sheet, leaving enough space between them to spread while baking.

                                Bake:

                                  - Bake in the preheated oven for 10–12 minutes or until the edges are slightly golden. The centers may look a little soft, which is fine since they will continue to cook on the baking sheet.

                                    - Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                                      Enjoy:

                                        - Once cooled, your Cheesecake Stuffed Chocolate Chip Cookies are ready to be devoured! Pair with a glass of milk for the ultimate treat!
