1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1/2 cup buttermilk

1/2 cup diced jalapeños (fresh or pickled, adjusted to taste)

1 cup chili (canned or homemade, preferably without beans)

1 teaspoon garlic powder

1 teaspoon onion powder

Optional: Fresh cilantro or green onions for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C). Prepare a 9x9 inch square baking dish by greasing it with non-stick spray or butter.

    Make the Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, and salt.

      Cut in the Butter: Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cheese and Jalapeños: Stir in the shredded cheddar cheese and diced jalapeños until evenly distributed.

          Incorporate Buttermilk: Pour in the buttermilk and mix gently with a rubber spatula or your hands until the dough comes together. Be careful not to overmix; it’s okay if there are a few lumps.

            Form the Pull-Aparts: Turn the dough out onto a lightly floured surface. Pat and shape the dough into a rectangle about 1 inch thick. Cut the dough into squares, roughly 2x2 inches each.

              Layer the Biscuit Squares: In the prepared baking dish, start stacking the biscuit squares on top of each other, keeping them layered neatly. You can alternate them with spoonfuls of your chili mixture as you stack.
